The Germans, I think. The Russians aren't my favourite civ either, if I'm completely honest.
Good civs in vanilla include the ubiquitous Dutch, the French ('cause of their three forts), British (such an easy economy) and Ottomans. The latter I only discovered lately, and I do like them even though their villager producing system sucks arse. It's just that armies of Jannissaries and Abus Guns are so bloody good (even against artillery) that you wouldn't need to train anything else, apart from artillery. Not that you would want to, of course. Grenadiers are okay, but who trains them when you have Abus as well? Hussars are fine, but not really necessary, and Cavalry Archers are terrible, not to mention they're way off the timescale.
Do you think AoE3 would have been better without Longbowmen, Crossbowmen, Cavalry Archers and all other medieval ranged units?

No. Swords were used for much longer, and two-handed swords have had a bit of a history in Germany.
